"We have always respected tradition. When I say "tradition", I'm not simply referring to the past, but rather a method of progressing by degrees, taking care not to regress. This is as opposed to "modernity", which consists of going forward by great strides, even if this entails going back and redoing what has already been done... The life span of a vineyard plot is calculated in terms of decades, and mistakes can be irreversible. Viticulture calls for perfect mastery of what one is doing. All vineyard operations, even removing a few leaves, have an effect. Furthermore, this effect can sometimes only show up in the long run, and not necessarily have a positive influence... Nature has its own balance. Going against this is tantamount to showing disrespect for the terroir, which is a after all a fragile microcosm. Altering the soil structure, for instance, would necessarily change the vineyard. It would no longer be the same terroir.."
